Aloha! This creamy Neapolitan Chia Smoothie is a result of me being indecisive, haha. I was planning to make a vanilla chia smoothie but this was the end results. Why have one flavor when you can have three, right! T
he vanilla layer is kinda mixed in to the strawberry here. I didn’t let it set before layering so it blended a bit but if you want nice distinct layers just let your flavor layers set a bit before doing it! I used Mamma Chia White Chia seeds for this recipe giving added nutritional value including a big boost of protein! You can use black Chia seeds, white seeds just give you a better color :). Oh ya, you can freeze this into creamy Popsicle’s and its amazing!! Enjoy !

Neapolitan Chia Parfait/smoothie RECIPE
Prep Time: 10 mins
Yields: 1 big serving or 2 small servings
Vanilla Layer Ingredients:
½ cup coconut milk
2 tbs white Mamma Chia seeds
¼ tsp vanilla
1 tbs coconut sugar or to taste
Chocolate Layer Ingredients:
½ cup I used coconut milk
2 tbs white Mamma Chia seeds
1 tbs cocoa powder
1 tbs coconut sugar or to taste
Strawberry Layer Ingredients:
¼ cup + 2 tbs used coconut milk
2 tbs white Mamma Chia seeds
12 fresh or frozen strawberries, halved
1 tbs coconut sugar or to taste
METHOD
- In 3 separate bowls, make each flavor or in your blender do one at a time and then pour into separate bowls.
- blend each at a time for 1 minute for a smooth and creamy texture.
- Chill at least 6 hours for a pudding dessert/breakfast or drink immediately
- Let layers sit for a few minutes in the fridge before layering in serving cup or drinking jar Enjoy immediately or store covered in fridge for up to 5 days.
- Top or layer with fresh fruits, granola, or toasted coconut!
